1. Quinoa Breakfast Bowl

Ingredients:

-Quinoa

-Non-diary milk

-Peanut butter

-Maple syrup

-Salt

-2 Bananas

-Dark chocolate

-Cocoa powder.

Instructions:

-In a medium pan, combine quinoa and a little bit of salt.

-Heat to a soft boil, covered up, for 15-20 minutes.

-Cook the quinoa until it is foamy, and the liquid has been
drained.

-Uncover and reduce to a low temperature then blend in the nondairy milk, mashed banana, cocoa powder, and maple syrup.

-Warm for around two minutes. If required, try it, and adjust the flavour.

-Enjoy!

2. Oatmeal Mug Cake

Light and airy, just adequate in sweetness to be enjoyable like

a sweet treat, yet nutritious enough for breakfast! It goes

perfectly with yogurt or a scoop of ice cream.

Ingredients:

-Oat flour

-Nut butter

-Baking powder

-Non-dairy milk

-Maple syrup

-Spices

-Vanilla

Instructions:

-Mix the nut butter, non-dairy milk, maple syrup, and vanilla. Stir it well

-In a seperate mug, mix the oat flour, salt spices, vanilla, and baking powder

-Afterwards, you put the dry ingredients together with the wet ingredients.

-Stir until the flour mixes perfectly with the rest of the ingredients

-Put the composition into the microwave for 50 seconds at 1100 watts (if your maximum power is lower, leave it in for a few seconds longer)

-Keep a close eye on the oatmeal cake while it is in the microwave

-When it is done, take it out carefully, and let it cool for 5-10 minutes before eating it.

Dinner

1. Burrito Bowl

Apart from being healthy, this vegan burrito bowl is

easy to prepare and delicious weeknight dinner

Ingredients:

-Black beans

-Rice

-Guacamole

-Grilled corn

-Tomatoes

-Pepper

-Onion

-Sweet potatoes

-Romaine lettuce

-Cilantro

-Tortilla strips

Instructions:

-Cook the rice according to package instructions

-Add chopped cilantro and lime juice once done

-Drain and rinse the black beans and warm them in a pot while seasoning them

-Cook the corn, whether fresh or frozen

-Put together the bowl, starting with a layer of rice on the ottom

-Following that, add the flavoured black beans, cooked veggies, corn, chopped lettuce/spinach, avocado slices and guacamole/salsa

-When it is done, take it out carefully, and let it cool for 5-10 minutes before eating it.

-Enjoy!

2. Noodles Salad

This quick asian vegan dish is easy to make,

and ready in less than 20 minutes. Ideal for when you’re in a rush.

Ingredients:

-Noodles

-Cucumber

-Tomatoes

-Corn

-Onion

-Pepper

-Onion

Instructions:

-Cook the noodles based on the package instructions; meanwhile prepare the vegetables, mix everything together, and focus on making the sauce, or alternatively you can add soy sauce.

-Sauce instructions: Chili garlic sauce – sweet and spicy; to make this sauce, you will need savury, spicy, and sweet condiments, along with salt

-Enjoy!

2. Risotto with Mushrooms

A speedy and easy italian dish!

Ingredients:

-Rice

-Mushrooms

-Vegan butter

-Vegan parmesan

-Condiments

Instructions:

-Cook the rice according to package instructions

-Chop mushrooms

-When the rice is nearly ready, fry the chopped mushrooms in vegan butter

-Add salt, pepper, curry, paprika or any other condiments to give it a specific flavour

-Mix the rice, and mushrooms

-Add vegan parmesan on top

-Let it melt on top, and enjoy!
